Instructions
Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
Wet mix: In a large bowl, mash bananas. Whisk in eggs, oil, applesauce, sweetener, and vanilla until smooth.
Dry mix: In another bowl, whisk flour, baking soda, cinnamon, and salt.
Combine: Add dry ingredients into wet and stir until just combined (do not overmix). Fold in walnuts.
Bake: Pour batter into loaf pan. Bake for 50–60 minutes, until a toothpick inserted in center comes out clean.
Cool & serve: Let cool in pan for 10 minutes, then transfer to wire rack. Slice and enjoy!
