Our final dish is an ode to East Africa! This traditional dish is popular in Tanzania, Kenya and other countries in various formats. Ugali is made from white or yellow cornmeal and sukuma wiki is a quick leafy sauce made from greens such as kale or collard greens. It is also high in protein as it is usually made with beef. Think of sukuma wiki as a warm, tasty, wholesome beef salad which you can eat on its own for a low carb option if you wish.
Overall, this meal is delicious, balanced and packed with nutrients from all those greens! Don't be intimidated! It is super easy to make!
TIP: Use a wooden spoon to stir your ugali into a smooth paste.
FUN FACT: Other names for ugali in different parts of Africa are fufu, gauli, gima, bogobe, vusuwa among others.
