Plantain is definitely our favourite whether it is boiled, fried or grilled! This is definitely not your average salad! The combination of ingredients here is absolutely delicious! It can be eaten on its own or as a side but whichever way you choose to eat it, just make sure you eat it! This recipe is packed with fresh flavours that compliment each other perfectly. Plantain Salad

Ingredients
- 1 ripe plantain
- 1 red bell pepper
- 1/2 red onion
- 1 tomato
- 240g boiled black-eyed peas (cooked/canned)
- Chopped parsley
- 1 tbsp extra virgin olive oil
- Salt to taste
Instructions
- Cut your plantain into cubes. Drizzle with olive oil and place in an oven at 180*C for 20 minutes until cooked. Take out and let cool down.
- Chop up your vegetables and put them in a bowl. (Don’t chop the beans).
- Combine plantain with all other ingredients. Enjoy!
