Bread or cake? This is the typical question that is asked during any conversation about banana bread. This healthy version is perfect as a breakfast to satisfy any banana bread craving.

Ingredients
  

  • 3 medium ripe bananas mashed
  • 2 large eggs
  • ¼ cup melted coconut oil
  • ¼ cup unsweetened applesauce for natural sweetness & moisture
  • cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 ½ cups whole wheat flour or oat flour for gluten-free option
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup chopped walnuts

Instructions
 

  • Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
  • Wet mix: In a large bowl, mash bananas. Whisk in eggs, oil, applesauce, sweetener, and vanilla until smooth.
  • Dry mix: In another bowl, whisk flour, baking soda, cinnamon, and salt.
  • Combine: Add dry ingredients into wet and stir until just combined (do not overmix). Fold in walnuts.
  • Bake: Pour batter into loaf pan. Bake for 50–60 minutes, until a toothpick inserted in center comes out clean.
  • Cool & serve: Let cool in pan for 10 minutes, then transfer to wire rack. Slice and enjoy!
