Ingredients
- 3 medium ripe bananas mashed
- 2 large eggs
- ¼ cup melted coconut oil
- ¼ cup unsweetened applesauce for natural sweetness & moisture
- ⅓ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 ½ cups whole wheat flour or oat flour for gluten-free option
- 1 tsp baking soda
- ½ tsp cinnamon
- ¼ tsp salt
- ½ cup chopped walnuts
Instructions
- Prep: Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment.
- Wet mix: In a large bowl, mash bananas. Whisk in eggs, oil, applesauce, sweetener, and vanilla until smooth.
- Dry mix: In another bowl, whisk flour, baking soda, cinnamon, and salt.
- Combine: Add dry ingredients into wet and stir until just combined (do not overmix). Fold in walnuts.
- Bake: Pour batter into loaf pan. Bake for 50–60 minutes, until a toothpick inserted in center comes out clean.
- Cool & serve: Let cool in pan for 10 minutes, then transfer to wire rack. Slice and enjoy!
